Description

Fire up the grill for these spicy-sweet chicken skewers marinated in beer and BBQ sauce. They’re smoky, juicy, and packed with flavor—perfect for summer cookouts or weeknight dinners.


Ingredients

  • 1 ½ lbs (680g) boneless, skinless chicken thighs, cut into chunks

  • 1/2 cup BBQ sauce

  • 1/3 cup beer (lager or pale ale works best)

  • 1 tbsp hot sauce (adjust to taste)

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • Skewers (soaked in water if wooden)


Instructions

  1. Marinate: In a bowl, mix BBQ sauce, beer, hot sauce, olive oil, garlic, paprika, salt, and pepper. Add chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

  2. Skewer & Grill: Thread marinated chicken onto skewers. Grill over medium-high heat for 10–12 minutes, turning occasionally, until cooked through and slightly charred.

  3. Serve: Brush with extra BBQ sauce if desired and serve hot with your favorite sides.

Notes

  • For extra heat, add chili flakes to the marinade.

  • Swap chicken thighs for breasts if preferred—just adjust cook time slightly.

  • Delicious served with corn on the cob, slaw, or grilled veggies.
