Ingredients
4 boneless skinless chicken thighs or breasts
1 cup buttermilk
2 tablespoons hot sauce
1 ½ cups all-purpose flour
½ cup cornstarch
2 teaspoons paprika

½ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon black pepper
Vegetable oil for frying
½ cup mayonnaise
1 tablespoon Dijon mustard
1 clove garlic minced
¼ teaspoon paprika
1 teaspoon hot sauce
4 brioche or sesame burger buns
8 dill pickle slices
1 cup shredded lettuce or greens (optional)
Instructions
- In a bowl, combine buttermilk and hot sauce. Add chicken, cover, and marinate for at least 1 hour.
- In a separate bowl, mix the flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and black pepper.
- Remove chicken from buttermilk mix, letting excess drip off, and coat in the flour mixture.
- Heat vegetable oil in a deep skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 5-7 minutes per side.
- In a small bowl, mix mayonnaise, Dijon mustard, minced garlic, paprika, and hot sauce to create the sauce.
- Assemble sandwiches by placing fried chicken on buns, topping with homemade sauce, dill pickle slices, and shredded lettuce if desired.
Notes
For extra crunch, allow the chicken to rest briefly on a wire rack after frying. Adjust the level of hot sauce in the marinade or sauce to suit your heat preference.
