Ingredients

6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon chili garlic sauce (or more to taste)

1/2 teaspoon rice vinegar

Salt and pepper to taste

Instructions

1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then cover, turn off heat, and let sit for 12 minutes.

2. Drain and cool eggs under cold water. Peel and slice in half lengthwise.

3. Scoop out yolks into a bowl and mash until smooth.

4. Add mayonnaise, mustard, chili garlic sauce, rice vinegar, salt, and pepper. Mix until creamy.

5. Spoon or pipe the filling into the egg whites.

6. Sprinkle with chopped chives and red pepper flakes if desired.

7. Chill until ready to serve.
