6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1–2 cloves of garlic, minced
1 tablespoon sriracha sauce
1 tablespoon chili powder
Salt and pepper to taste
Chopped green onions or cilantro for garnish
Instructions
Place the eggs in a pot and cover them with cold water (about an inch above the eggs). Bring the water to a boil, then cover and remove from heat. Let them sit for 12-15 minutes.
Transfer the eggs to an ice bath to cool for about 5 minutes. Gently tap the eggs against a hard surface and peel off the shells.
