Ingredients
4 salmon fillets (about 6 oz each) 2 tablespoons olive oil Salt and black pepper to taste 1 cup cooked jasmine rice or brown rice 1 cup shredded red cabbage 1/2 cup grated carrots 1 cucumber, thinly sliced 1 avocado, sliced 2 tablespoons chopped fresh parsley or cilantro **Spicy Honey Mustard Sauce:** 3 tablespoons Dijon mustard 2 tablespoons honey 1 tablespoon mayonnaise 1 tablespoon lemon juice 1 teaspoon hot sauce (adjust to taste) 1/4 teaspoon smoked paprika
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Whisk together all sauce ingredients in a small bowl until smooth. Place salmon fillets on the prepared sheet. Brush generously with the spicy honey mustard sauce. Bake for 12–15 minutes or until the salmon flakes easily with a fork. While the salmon cooks, prepare rice and chop vegetables. Assemble bowls by adding rice, vegetables, and avocado. Top with salmon. Drizzle extra sauce and garnish with parsley or cilantro.
Notes
Use quinoa instead of rice for a protein boost. Add pickled red onions or jalapeños for extra flavor. Make it dairy-free by omitting mayonnaise or using a vegan version.
