2 tablespoons of olive oil
1 medium onion, chopped
2 cloves of fresh garlic, minced
1 tablespoon of jalapeño, chopped
1 pound of boneless, skinless chicken breasts or thighs, diced
4 cups of chicken broth
1 can (15 oz) of sweet corn, drained
1 cup of cream cheese, softened
1 cup of shredded cheddar cheese, plus extra for serving
1 teaspoon of smoked paprika
1 teaspoon of cumin

Instructions
