  • 4 flour tortillas (8-inch)
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • ½ cup shredded mozzarella cheese
  • 2 tbsp olive oil (for cooking)
  • 1 small onion, thinly sliced (optional)
  • 1 tsp garlic powder
  • ½ tsp dried oregano (optional)
  • Salt and pepper to taste

Instructions

1️⃣ Prepare the Filling: In a bowl, combine chopped spinach, crumbled feta, shredded mozzarella, garlic powder, oregano, salt, and pepper. Set aside.

2️⃣ Cook the Quesadillas: Heat 1 tablespoon of olive oil in a skillet over medium heat. If using, sauté the sliced onions for 2-3 minutes until softened and golden. Add the spinach and cheese mixture to the pan and stir for about 1-2 minutes until the spinach wilts and the cheese starts to melt. Remove from heat.

3️⃣ Assemble the Quesadillas: Lay 2 tortillas flat on a clean surface. Divide the spinach-feta mixture between the two tortillas, spreading it evenly across one half of each tortilla. Top with the second tortilla to form a sandwich.

4️⃣ Cook the Quesadillas: Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat. Place the assembled quesadillas in the skillet and cook for 2-3 minutes per side, or until golden and crispy, and the cheese has melted.

5️⃣ Serve: Remove from the skillet, cut into wedges, and serve hot.
