  • ½ cup grated Parmesan cheese

  • 1 teaspoon dried basil

  • 2 tablespoons olive oil

  • Instructions

  • Preheat your oven to 375°F (190°C). A hot oven means the chicken will cook just right!
  • Season both sides of the chicken breasts with salt, pepper, and onion powder. Drizzle a bit of olive oil in a skillet over medium heat and sear the chicken for about 4-5 minutes on each side until it's golden brown.
  • In a mixing bowl, combine the spinach, chopped artichokes, cottage cheese, ½ cup of mozzarella cheese, ½ cup of Parmesan cheese, minced garlic, dried basil, and a pinch of salt and pepper. Stir until well-mixed.
  • Transfer the seared chicken to a greased baking dish. Spoon the creamy spinach and artichoke mixture generously over each chicken breast.
  • Sprinkle the remaining mozzarella and Parmesan over the chicken and mixture.
