4 boneless, skinless chicken breasts
2 cups fresh spinach (or 1 cup frozen, thawed and drained)
1 cup canned artichoke hearts, chopped (drained well)
1 ½ cups cottage cheese (small curd recommended)
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon dried basil
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Preheat your oven to 375°F (190°C). A hot oven means the chicken will cook just right!
Season both sides of the chicken breasts with salt, pepper, and onion powder. Drizzle a bit of olive oil in a skillet over medium heat and sear the chicken for about 4-5 minutes on each side until it's golden brown.
In a mixing bowl, combine the spinach, chopped artichokes, cottage cheese, ½ cup of mozzarella cheese, ½ cup of Parmesan cheese, minced garlic, dried basil, and a pinch of salt and pepper. Stir until well-mixed.
Transfer the seared chicken to a greased baking dish. Spoon the creamy spinach and artichoke mixture generously over each chicken breast.
Sprinkle the remaining mozzarella and Parmesan over the chicken and mixture.
Pop the dish in the oven and bake for about 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly.
Once out of the oven, let the dish sit for about 5 minutes before serving.
