- 2 chicken breasts, sliced
- 1 cup fresh spinach, chopped
- 1/2 cup canned artichoke hearts, chopped
- 1/2 cup cottage cheese
- 1/4 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 clove garlic, minced
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt & pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat Oven: Set to 200°C (400°F). Grease a baking dish.
- Sear the Chicken: Season chicken with salt, pepper, paprika, and onion powder. Sear in olive oil for 2-3 minutes per side. Transfer to baking dish.
- Make the Spinach Artichoke Mix: In a bowl, mix cottage cheese, cream cheese, spinach, artichokes, garlic, and mozzarella.
- Top & Bake: Spread mixture over chicken. Bake for 20 minutes until bubbly and golden.
- Serve: Enjoy warm, paired with rice, quinoa, or a fresh salad.
Notes
- Use Greek yogurt instead of cream cheese for extra protein.
- Swap mozzarella for Parmesan for a sharper taste.
