Description

Ingredients

  • 2 chicken breasts, sliced
  • 1 cup fresh spinach, chopped
  • 1/2 cup canned artichoke hearts, chopped
  • 1/2 cup cottage cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 clove garlic, minced
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat Oven: Set to 200°C (400°F). Grease a baking dish.
  • Sear the Chicken: Season chicken with salt, pepper, paprika, and onion powder. Sear in olive oil for 2-3 minutes per side. Transfer to baking dish.
  • Make the Spinach Artichoke Mix: In a bowl, mix cottage cheese, cream cheese, spinach, artichokes, garlic, and mozzarella.
  • Top & Bake: Spread mixture over chicken. Bake for 20 minutes until bubbly and golden.
  • Serve: Enjoy warm, paired with rice, quinoa, or a fresh salad.

  • Use Greek yogurt instead of cream cheese for extra protein.
  • Swap mozzarella for Parmesan for a sharper taste.
