2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 cup cream cheese, softened
½ cup sour cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 cloves garlic, minced
½ teaspoon onion powder
Salt and pepper to taste
1 package of phyllo pastry or puff pastry sheets
1 egg, beaten
Instructions
Preheat your oven to 375°F (190°C).
If using fresh spinach, sauté in a pan to wilt it down, about 2-3 minutes. Drain excess water and chop finely. If using frozen spinach, ensure it’s fully thawed and squeezed dry.
In a medium bowl, combine cream cheese, sour cream, mozzarella, Parmesan, minced garlic, onion powder, salt, and pepper. Stir in the wilted spinach until well-mixed.
Roll out phyllo or puff pastry on a lightly floured surface and cut into 3×3-inch squares.
Add about a tablespoon of the spinach filling to the center of each pastry square.
Fold the corners of the pastry over to the center and brush the tops with the beaten egg.
Place the bites on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until golden brown.
Let them cool for a few minutes before serving.
