Description
These golden patties combine fresh spinach and tangy feta into crispy, satisfying snacks or appetizers. Easy to make and packed with Mediterranean flair!
Ingredients
- 
2 cups fresh spinach, chopped 
- 
1 cup feta cheese, crumbled 
- 
1 cup breadcrumbs 
- 
2 eggs 
- 
2 cloves garlic, minced 
- 
1 small onion, finely chopped 
- 
1 tbsp olive oil (plus extra for frying) 
- 
Salt and pepper, to taste 
Instructions
- 
Sauté onion and garlic in olive oil until soft. 
- 
In a bowl, mix spinach, feta, breadcrumbs, eggs, sautéed onion and garlic, salt, and pepper. 
- 
Form mixture into small patties. 
- 
Heat olive oil in a pan and fry patties 3–4 minutes per side until golden and cooked through. 
- 
Drain on paper towels and serve warm. 
Notes
- 
Add chopped fresh herbs like dill or parsley for extra flavor. 
- 
Bake at 375°F (190°C) for 20 minutes for a lighter option. 
- 
Serve with tzatziki or yogurt dip.
