Description

These golden patties combine fresh spinach and tangy feta into crispy, satisfying snacks or appetizers. Easy to make and packed with Mediterranean flair!


Ingredients

  • 2 cups fresh spinach, chopped

  • 1 cup feta cheese, crumbled

  • 1 cup breadcrumbs

  • 2 eggs

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 tbsp olive oil (plus extra for frying)

  • Salt and pepper, to taste


Instructions

  • Sauté onion and garlic in olive oil until soft.

  • In a bowl, mix spinach, feta, breadcrumbs, eggs, sautéed onion and garlic, salt, and pepper.

  • Form mixture into small patties.

  • Heat olive oil in a pan and fry patties 3–4 minutes per side until golden and cooked through.

  • Drain on paper towels and serve warm.

Notes

  • Add chopped fresh herbs like dill or parsley for extra flavor.

  • Bake at 375°F (190°C) for 20 minutes for a lighter option.

  • Serve with tzatziki or yogurt dip.
