2 cups of fresh spinach, chopped
1 tablespoon of olive oil
1 cup of cream cheese, softened
1 cup of shredded cheddar cheese
1 cup of shredded Monterey Jack cheese
1/2 cup of sour cream
1 clove of garlic, minced
1 teaspoon of cumin
1/2 teaspoon of chili powder
Salt and pepper, to taste
Tortilla chips, veggies, or bread for serving
Instructions
In a medium skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 3-4 minutes until wilted. Remove from heat and set aside.
In a large mixing bowl, combine the softened cream cheese, shredded cheddar, Monterey Jack, sour cream, minced garlic, cumin, and chili powder. Stir until everything is well mixed and creamy.
Gently fold in the sautéed spinach. At this point, season your dip generously with salt and pepper. Taste it—if it needs a little more kick, add an extra dash of chili powder!
Transfer the mixture to a baking dish (or keep it in the skillet if you want to save on dishes). Bake at 350°F (175°C) for about 20 minutes, or until hot and bubbly!
