500 grams of waxy potatoes like Yukon Gold
1 large egg
150 grams of all-purpose flour, plus extra for dusting

Fresh nutmeg (optional, but highly recommended)
Parmesan cheese for serving
Instructions
Prep the potatoes by boiling them in salted water until fork-tender, about 20-25 minutes. Don't peel them before cooking; the skin helps to keep them fluffy.
Sauté the spinach in a separate pan with olive oil and minced garlic. Toss in fresh or thawed spinach until wilted, then let cool slightly.
Create the gnocchi dough by mashing cooked potatoes and mixing with sautéed spinach, egg, salt, pepper, and freshly grated nutmeg. Gradually add flour until you have a soft dough.
