  • 150 grams of all-purpose flour, plus extra for dusting
  • Salt and pepper to taste
  • Fresh nutmeg (optional, but highly recommended)
  • Parmesan cheese for serving

  • Instructions

  • Prep the potatoes by boiling them in salted water until fork-tender, about 20-25 minutes. Don't peel them before cooking; the skin helps to keep them fluffy.
  • Sauté the spinach in a separate pan with olive oil and minced garlic. Toss in fresh or thawed spinach until wilted, then let cool slightly.
  • Create the gnocchi dough by mashing cooked potatoes and mixing with sautéed spinach, egg, salt, pepper, and freshly grated nutmeg. Gradually add flour until you have a soft dough.
  • Shape and cut the dough into small pieces, rolling each piece on the back of a fork to create ridges for that cute look.
