1 ¾ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 large egg
1 cup buttermilk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
2 cups heavy cream
½ cup powdered sugar
1 tsp vanilla extract
1 envelope unflavored gelatin
3 tbsp cold water

Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
Add the egg, buttermilk, vegetable oil, and vanilla extract to the flour mixture. Stir until smooth.
Carefully mix in the boiling water.
Pour the batter into a greased 9×13 inch baking pan and bake for 30-35 minutes.
Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
In a small bowl, combine the gelatin with cold water and let it sit for 5 minutes.
Whip together the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Melt the bloomed gelatin and fold it into the whipped cream.
Divide the mousse and add food coloring as desired.
Layer the cooled cake and mousse in a trifle dish, finishing with mousse on top.
Cover and refrigerate for at least two hours before serving.
