4 tablespoons unsalted butter, at room temperature
1/2 cup heavy cream (or milk for a lighter version)
Salt and pepper to taste
1/2 cup shredded cheese (cheddar works wonders!)
Fresh chives, finely chopped (for garnish)
Optional: Food coloring (black or green) for extra spookiness!
Instructions
Prep the potatoes: Start by peeling the russet potatoes and cutting them into large chunks.
Boil the potatoes: Place your potato chunks in a large pot and cover them with cold water. Add salt and bring to a boil, then reduce to a simmer and cook for 15-20 minutes.
Drain and steam-dry: Carefully drain the potatoes and let them steam dry to remove excess moisture.
Mash it up: Return the drained potatoes to the pot, add butter and cream (or milk), and mash until smooth.
Season to taste: Stir in salt and pepper, and mix in cheese if desired.
Shape the skulls: Mold the potato mash into skull shapes using a cookie cutter or by hand.
Add some color (optional): Mix in food coloring to create spooky shades.
Garnish: Place potatoes on a platter and sprinkle with chives.
