4 medium russet potatoes
1 cup cooked steak, diced
1 cup shredded cheese
½ cup sour cream
¼ cup green onions, sliced
1 tablespoon olive oil
Salt and pepper to taste
Optional: bacon bits or jalapeños
Preheat your oven to 400°F (200°C).
Scrub the russet potatoes under cold water, then pat them dry. Poke a few holes in each potato with a fork.
Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until they are tender when pierced with a fork.
Once baked, let the potatoes cool for about 10 minutes. Cut each potato in half lengthwise and scoop out a bit of the flesh.
Rub the potato skins with olive oil and sprinkle with salt and pepper. Place them cut-side down on a baking sheet.
Broil the skins for about 5-7 minutes until the edges are golden brown and crispy.
Mix diced cooked steak with half of the cheese and spoon into each potato skin. Top with the remaining cheese.
Return the loaded potato skins to the oven and bake for 10-15 minutes, until the cheese is bubbly and golden.
Garnish with sour cream, green onions, and any additional toppings before serving.
