  • ½ cup sour cream
  • ¼ cup green onions, sliced
  • 1 tablespoon olive oil

  • Instructions

  • Preheat your oven to 400°F (200°C).
  • Scrub the russet potatoes under cold water, then pat them dry. Poke a few holes in each potato with a fork.
  • Place the potatoes directly on the oven rack and bake for about 45-60 minutes, until they are tender when pierced with a fork.
  • Once baked, let the potatoes cool for about 10 minutes. Cut each potato in half lengthwise and scoop out a bit of the flesh.
  • Rub the potato skins with olive oil and sprinkle with salt and pepper. Place them cut-side down on a baking sheet.
  • Broil the skins for about 5-7 minutes until the edges are golden brown and crispy.
  • Mix diced cooked steak with half of the cheese and spoon into each potato skin. Top with the remaining cheese.
