Description

Delicious loaded potato skins filled with steak make for the ultimate game-day snack. Perfect for gatherings, these treats are a must-try!

Ingredients

Scale
  • 4 medium russet potatoes, scrubbed clean
  • 1 pound flank steak or sirloin, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or extra oil for brushing
  • Optional toppings: crispy bacon bits, jalapeños, or avocado

  • Instructions

  • Preheat the oven: Start by preheating your oven to 400°F (200°C). A hot oven ensures perfectly crispy potato skins!
  • Bake the potatoes: Place your scrubbed russet potatoes on a baking sheet. Prick them a few times with a fork, brush lightly with olive oil, and sprinkle some salt. Bake in the preheated oven for 45-60 minutes, until tender when pierced with a fork.
  • Cook the steak: While the potatoes are baking, heat a skillet over medium-high heat and add a drizzle of olive oil. Season the steak slices with salt, pepper, garlic powder, and onion powder. Sauté until browned and cooked to your preference, about 3-5 minutes. Remove from heat and set aside.
  • Prepare the potatoes: Once the potatoes are baked, remove them from the oven. Let them cool for a few minutes until they’re manageable to handle. Cut each potato in half lengthwise and scoop out a bit of the flesh, leaving about a 1/4-inch border to create a sturdy skin.
  • Load them up: Brush the insides of the potato skins with a little olive oil or cooking spray, then season with a pinch of salt. Fill each skin with the cooked steak, then top with shredded cheddar cheese.
  • Bake again: Return the loaded potato skins to the oven for another 10-15 minutes, or until the cheese is melted and bubbly.
  • Finish and serve: Once out of the oven, top your steak loaded potato skins with a dollop of sour cream and a sprinkle of green onions (and any other optional toppings you desire). They are best enjoyed hot and fresh!
