  • 1 cup prepared queso (store-bought or homemade)

  • 1 small red bell pepper, diced

  • ½ cup diced onion

  • ¼ cup chopped cilantro (optional)

  • Lime wedges, for serving


Instructions

  • Cook steak: Heat olive oil in a skillet over medium-high heat. Season steak with garlic powder, salt, and pepper. Cook for 3–4 minutes per side until nicely browned and cooked through. Set aside.

  • Sauté veggies: In the same pan, sauté onions and bell pepper until tender, about 5 minutes.

  • Combine: Stir in cooked rice and heat through. Drizzle queso over rice mixture and stir until creamy.

  • Serve: Slice steak and layer over queso rice. Garnish with cilantro and lime wedges.
