1 pound steak (sirloin or flank)
1 cup white rice
1 cup queso cheese dip
1 cup beef broth
1 medium onion, diced
2 cloves garlic, minced
1 bell pepper, diced
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro, for garnish
1 lime, wedges for serving
Season your steak generously with salt, pepper, chili powder, and cumin. Let it sit for about 10-15 minutes.
In a medium pot, combine the white rice and beef broth. Bring it to a boil, then reduce to low, cover, and let it simmer for about 15 minutes.
