1 medium onion (sliced thin; white or yellow onions work wonderfully)
2 cloves of garlic (minced)
2 cups of beef broth (homemade or store-bought)
2 tablespoons of Worcestershire sauce
2 tablespoons of flour (to thicken the gravy)
1 tablespoon of butter (for that finishing touch of flavor)
Optional: Fresh herbs like thyme or parsley for garnish
Instructions
Take your steak out of the fridge about 30 minutes before cooking. Season both sides generously with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat until it shimmers.
Place the steak in the skillet, sear for about 3-4 minutes on each side for medium-rare.
Remove the steak from the skillet and let it rest on a plate, covered loosely with foil.
In the same skillet, add sliced onions and sauté for about 5-7 minutes until soft and golden brown. Add minced garlic and cook for an additional minute.
Sprinkle the flour over the onions and garlic, stir well, and let it cook for a minute. Slowly pour in the beef broth and whisk until combined. Add in Worcestershire sauce and simmer for about 5 minutes until thickened.
Stir in the butter until melted. Adjust seasoning to taste.
Return the rested steak to the pan, slice against the grain, and drizzle with gravy. Garnish with fresh herbs if desired.
