3 lbs baby potatoes, halved or quartered
1 cup sour cream
1/2 cup mayonnaise
1 tbsp Dijon mustard
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
1 cup cooked bacon, chopped
1/2 cup sharp cheddar cheese, shredded
1/4 cup green onions, sliced
1 tbsp fresh parsley, chopped (optional)
Instructions
In a large pot, bring salted water to a boil. Add halved or quartered potatoes and cook until fork-tender, about 15-20 minutes.
In a large mixing bowl, combine sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, and a pinch of salt and pepper. Mix until smooth and creamy.
Drain the potatoes and let them cool slightly. Warm, but not hot, potatoes will absorb the dressing better.
Gently fold the warm potatoes into the dressing until coated.
Stir in the chopped bacon, cheddar cheese, and sliced green onions. Optionally add fresh parsley.
Taste and adjust seasoning with more salt, pepper, or a splash of vinegar.
Transfer to a serving bowl and refrigerate for 30 minutes before serving.
