Cook the Noodles: Start by boiling a large pot of water. Once it’s rolling, add in your egg noodles and cook according to the package directions until they’re al dente. Drain and set aside.
Prepare the Chicken: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the bite-sized chicken pieces to the hot pan. Season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
Make the Sauce: In the same pan, reduce the heat to medium and add the remaining tablespoon of sesame oil. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant.
Add the Flavor: Pour the soy sauce, honey, rice vinegar, and red pepper flakes into the pan. Stir to combine and let the sauce simmer for 1-2 minutes until slightly thickened.
Bring It All Together: Add the cooked chicken back into the pan along with the noodles. Toss everything together gently, coating the noodles and chicken evenly with the sauce.
Garnish and Serve: Sprinkle the sliced green onions and sesame seeds on top and serve hot.
