Ingredients

1 ½ cups all-purpose flour

¾ cup sugar

½ tsp baking soda

½ tsp salt

½ tsp cinnamon (optional)

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

1 ½ cups chopped fresh strawberries
Instructions

Preheat oven to 350°F (175°C). Grease a loaf pan.

In a bowl, whisk flour, sugar, baking soda, salt, and cinnamon.

In another bowl, mix eggs, oil, and vanilla. Add to dry ingredients and stir until just combined.

Gently fold in strawberries.

Pour batter into pan and bake for 50–55 minutes, or until a toothpick comes out clean.

Cool in pan for 10 minutes, then transfer to a wire rack.
