  • 1 tsp vanilla extract
  • 1 ½ tsp gelatin powder
  • 2 tbsp cold water

Instructions

  • Prepare the strawberry puree: Blend strawberries, granulated sugar, and lemon juice until smooth. Strain if desired to remove seeds.

  • Bloom the gelatin: In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes. Microwave for 10 seconds until dissolved.

  • Combine: Stir the warm gelatin into the strawberry puree and let cool slightly.

  • Whip the cream: Beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.

  • Fold together: Gently fold the strawberry mixture into the whipped cream until fully combined and fluffy.

  • Chill & serve: Spoon into serving glasses and refrigerate for at least 2 hours until set. Garnish with fresh strawberries or whipped cream before serving.

Notes

  • Use frozen strawberries if fresh ones aren’t available (thaw first).
  • For a dairy-free version, substitute coconut cream.
