This Strawberry Mousse is a light, airy, and creamy dessert bursting with fresh strawberry flavor. Perfect for a romantic treat, special occasions, or an easy yet elegant dessert!
Ingredients
- 2 cups fresh strawberries, hulled and chopped
- ¼ cup granulated sugar
- 1 tbsp lemon juice
- 1 cup heavy whipping cream, chilled
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 ½ tsp gelatin powder
- 2 tbsp cold water

Prepare the strawberry puree: Blend strawberries, granulated sugar, and lemon juice until smooth. Strain if desired to remove seeds.

Bloom the gelatin: In a small bowl, sprinkle gelatin over cold water and let sit for 5 minutes. Microwave for 10 seconds until dissolved.

Combine: Stir the warm gelatin into the strawberry puree and let cool slightly.

Whip the cream: Beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Fold together: Gently fold the strawberry mixture into the whipped cream until fully combined and fluffy.

Chill & serve: Spoon into serving glasses and refrigerate for at least 2 hours until set. Garnish with fresh strawberries or whipped cream before serving.
Notes
- Use frozen strawberries if fresh ones aren’t available (thaw first).
- For a dairy-free version, substitute coconut cream.
- Can be stored in the fridge for up to 3 days.
