  • ½ cup of unsalted butter, softened
  • ¼ cup of powdered sugar
  • 1 egg yolk
  • 12 tablespoons of cold water (as needed)
  • Pinch of salt
  • 1 ½ cups of fresh strawberries, hulled and sliced
  • ¾ cup of pistachio cream (or crushed pistachios mixed with honey)
  • 1 cup of heavy cream
  • ¼ cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of cornstarch
  • Fresh pistachios for topping

  • Instructions

  • In a mixing bowl, combine the flour and powdered sugar with a pinch of salt. Add the softened butter and blend until the mixture resembles coarse crumbs.
  • Add the egg yolk and mix until about combined. Slowly add cold water, one tablespoon at a time, until the dough holds together.
  • Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Roll out the dough on a lightly floured surface to fit your tart pan. Transfer it to the pan, trimming any excess dough. Poke holes in the bottom.
  • Line the crust with parchment paper and fill with pie weights. Bake for about 15-20 minutes until golden. Remove weights and bake for another 5 minutes. Let it cool.
  • In a medium bowl, whip the heavy cream until soft peaks form. Gradually add sugar and vanilla extract, continuing to beat until stiff peaks form. Gently fold in the pistachio cream.
  • Once the crust has cooled, spread the pistachio filling over the crust and arrange the fresh strawberry slices on top.
  • Refrigerate for at least an hour to let it set. Sprinkle with chopped pistachios before serving.
