Ingredients
Scale
1 ½ cups of fresh strawberries, hulled and sliced
1 ½ cups of rhubarb, chopped into ½-inch pieces
1 cup of granulated sugar
¼ cup of all-purpose flour
1 tablespoon of lemon juice
1 teaspoon of vanilla extract
1 pinch of salt
1 pie crust
1 egg, beaten
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the sliced strawberries and chopped rhubarb. Add in the granulated sugar, flour, lemon juice, vanilla extract, and a pinch of salt. Gently toss everything together until the fruit is evenly coated.
Allow the fruit mixture to sit for about 15-20 minutes.
Roll out the crust and place it in your pie dish.
Pour the fruit filling into the crust, making sure to scrape all the syrup into the pie.
If you have a second crust, place it over the filling and cut slits for ventilation or create a lattice design.
Brush the top crust with the beaten egg.
Place the pie on a baking sheet and bake at 425°F (220°C) for 20 minutes, then reduce the temperature to 350°F (175°C) and continue baking for another 30-35 minutes.
Let the pie cool for at least an hour before slicing.
Notes
