- 2 chicken breasts, grilled & sliced
- 1 cup corn kernels (grilled or canned)
- ¼ cup mayonnaise
- ¼ cup crumbled cotija cheese
- 1 tbsp lime juice
- ½ tsp chili powder
- ¼ tsp garlic powder
- Salt & pepper to taste
- 2 tbsp chopped cilantro
- ½ avocado, sliced (optional)
Instructions
- In a bowl, mix corn, mayo, lime juice, chili powder, garlic powder, salt, and cotija cheese.
- Divide rice into bowls and top with sliced grilled chicken.
- Spoon the street corn mixture over the chicken.
- Garnish with cilantro, extra cheese, and avocado slices if using.
