Ingredients
– 4 boneless, skinless chicken breasts – 1 cup shredded mozzarella cheese – 1/4 cup grated Parmesan cheese – 1/4 cup fresh basil leaves, chopped – 1 cup marinara sauce – 1 cup Italian-style breadcrumbs – 2 eggs, beaten – 2 tbsp olive oil – Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C). Cut a pocket in each chicken breast without cutting all the way through. Stuff each pocket with mozzarella and chopped basil. Season chicken with salt and pepper. Dip chicken breasts in beaten eggs, then coat with breadcrumbs. Heat olive oil in a skillet over medium heat and brown chicken on both sides, about 3-4 minutes per side. Place browned chicken in a baking dish, spoon marinara sauce over each piece, and sprinkle with Parmesan cheese. Bake for 20-25 minutes until chicken is cooked through and cheese is bubbly. Serve hot.
Notes
Use fresh mozzarella for best flavor. Serve with pasta or a side salad. Add red pepper flakes for a spicy kick.
