  • Instructions

  • In a large bowl, combine the flour, baking powder, and salt. Mix well using a whisk to incorporate air and fluff it up.
  • Slowly add the water and olive oil to the dry ingredients. Mix it with a wooden spoon until a dough starts to form.
  • Turn the dough out onto a lightly floured surface. Knead it gently for about 2-3 minutes until it’s smooth and elastic.
  • Cover the dough with a clean kitchen towel and let it rest for about 10 minutes.
  • In a pan over medium heat, add olive oil and sauté the onion until soft and translucent, about 3-4 minutes.
  • Add the chopped spinach, black pepper, and chili flakes. Stir until the spinach is wilted and well combined. Remove from heat and let it cool slightly, then stir in the feta cheese.
  • Divide the rested dough into 6 equal portions. Roll each piece into a ball and then flatten into a disk, about ¼-inch thick.
  • Place a scoop of filling in the center of each disk. Bring the edges of the dough together to encase the filling, pinching to seal well.
  • Heat a non-stick skillet over medium heat, add olive oil, and carefully place one stuffed flatbread in the pan. Cook for about 3-4 minutes on each side until golden brown.
  • Serve warm, perhaps with extra feta or a dollop of yogurt on the side.
