- 4 large bell peppers (any color), halved and deseeded
- 1 lb ground beef or turkey (or a plant-based alternative)
- 1 cup cooked rice or quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- ½ tsp salt & ½ tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
- Add ground meat, cooking until browned. Drain excess fat.
- Stir in diced tomatoes, rice (or quinoa), Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Fill bell pepper halves with the mixture, top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
- Serve warm, garnished with fresh herbs if desired.

- For a vegetarian option, replace meat with black beans or lentils.
