  • 4 large bell peppers (any color), halved and deseeded
  • 1 lb ground beef or turkey (or a plant-based alternative)
  • 1 cup cooked rice or quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • ½ tsp salt & ½ tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
  • Add ground meat, cooking until browned. Drain excess fat.
  • Stir in diced tomatoes, rice (or quinoa), Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  • Fill bell pepper halves with the mixture, top with shredded cheese.
  • Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
  • Serve warm, garnished with fresh herbs if desired.
