Ingredients

  • Pork Tenderloin (1.5 – 2 lbs)
  • Olive Oil (2 tbsp)
  • Bread Crumbs (1 cup, gluten-free optional)
  • Fresh Spinach (2 cups)
  • Garlic (3 cloves, minced)
  • Onion (1 medium, chopped)
  • Sun-dried Tomatoes (½ cup, chopped)
  • Parmesan Cheese (½ cup, grated)
  • Fresh Herbs (rosemary, thyme, and sage, 1 tsp each)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C).
  2. Prepare the Stuffing: In a skillet, heat olive oil and sauté onion, garlic, and spinach until softened. Stir in bread crumbs, sun-dried tomatoes, Parmesan, and herbs. Season with salt and pepper.
  3. Stuff the Pork: Butterfly the pork tenderloin and stuff it with the prepared mixture. Secure with toothpicks or kitchen twine.
  4. Sear the Pork: Heat olive oil in an oven-safe skillet and sear the stuffed tenderloin on all sides until golden brown.
  5. Roast the Pork: Transfer to the oven and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).
  6. Rest and Serve: Let the pork rest for 10 minutes before slicing and serving.

Notes

  • Make Ahead: Prepare the stuffing a day before and store it in the fridge.
  • Substitutions: Use gluten-free bread crumbs and dairy-free cheese for a vegan or dairy-free version.
  • Slow Cooker: For a more hands-off approach, sear the pork and cook it on low in a slow cooker for 6-8 hours.
