Ingredients

Scale
  • 1 loaf of day-old bread (about 10 cups, cubed; sourdough or whole wheat)
  • 1 cup unsalted butter (2 sticks)
  • 1 large onion, diced
  • 34 ribs of celery, diced
  • 4 cloves of fresh garlic, minced
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 23 cups low-sodium chicken or vegetable broth
  • Salt and pepper to taste
  • Optional: 1 cup cooked sausage or nuts for added texture and flavor

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Cut up your day-old bread into cubes and let it sit out to stale a bit if it’s fresh.
  • In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté until they become softened, about 5-7 minutes. Then toss in the minced garlic and cook for an additional minute.
  • Sprinkle in the dried sage, thyme, and parsley. Season with salt and pepper. Stir everything together and let those flavors meld for a minute or so.
  • In a large bowl, place your cubed bread. Pour the sautéed vegetable mixture over the bread and toss gently to combine.
  • Gradually pour in the chicken or vegetable broth, starting with 2 cups. Gently mix until the bread is moist but not mushy. Add more broth if you prefer a wetter stuffing.
  • Grease a 9×13 inch baking dish. Spoon the stuffing mixture into the dish, and spread it out evenly.
  • Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
