2 grilled chicken breasts, sliced

6 cups mixed salad greens

1 cup sliced strawberries

1/2 cup blueberries

1/2 cup crumbled feta or goat cheese

1/4 red onion, thinly sliced

1/3 cup toasted pecans or walnuts

— Hot Bacon Dressing —

6 slices bacon, chopped

2 tablespoons bacon drippings

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

Salt and pepper, to taste


Instructions

1. Cook chopped bacon in a skillet until crispy. Remove bacon and set aside, leaving 2 tablespoons drippings in the pan.

2. Whisk vinegar, Dijon mustard, and honey into the hot drippings. Cook on low heat for 1 minute while whisking constantly. Season with salt and pepper.

3. Arrange salad greens in a large bowl or platter. Top with sliced chicken, strawberries, blueberries, cheese, red onion, and toasted nuts.

4. Drizzle hot bacon dressing over the salad just before serving. Sprinkle with reserved crispy bacon.

Notes

Use rotisserie chicken for convenience.
