Ingredients

Scale

4 cups mixed greens (arugula, spinach, romaine)

1 orange, peeled and segmented

1/2 cup strawberries, sliced

1/4 cup blueberries

1/4 cup crumbled feta cheese

1/4 cup chopped walnuts or pecans (toasted)

1 tablespoon fresh mint, chopped (optional)

For the vinaigrette:

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon lemon juice

1/2 teaspoon Dijon mustard

Salt and pepper to taste

Instructions

1. In a small bowl, whisk together olive oil, honey, lemon juice, mustard, salt, and pepper to make the vinaigrette.

2. In a large salad bowl, combine mixed greens, orange segments, strawberries, blueberries, feta, and nuts.

3. Drizzle the vinaigrette over the salad.

4. Toss gently to coat.

5. Garnish with fresh mint if using.

6. Serve immediately for best texture and flavor.

Notes

Add grilled chicken for a heartier version.

Use goat cheese instead of feta if preferred.

Double the vinaigrette for meal prep or extra drizzle.
