Ingredients
• 4 cups baby spinach
• 1 cup kale, chopped and stems removed
• 1 cup fresh strawberries, halved
• 1 cup blueberries
• 1 cup raspberries
• 1/2 cup walnuts, toasted and chopped
• 1/4 cup pumpkin seeds (pepitas)
• 1/4 cup crumbled goat cheese or feta (optional)
Instructions
1. In a large bowl, combine baby spinach, kale, strawberries, blueberries, and raspberries.
2. In a blender or small bowl, whisk together Greek yogurt, fresh lemon juice, olive oil, honey, chopped fresh parsley, chopped fresh dill, salt, and pepper until smooth and creamy.
