Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
1/3 cup sweet chili sauce
2 tablespoons soy sauce
2 cloves garlic minced
1 tablespoon fresh ginger grated
1 tablespoon lime juice
1/2 cup coconut milk
1 tablespoon honey
2 cups cooked jasmine rice
1/4 cup fresh cilantro chopped
1 lime cut into wedges
1/4 teaspoon chili flakes optional
Instructions
- In a mixing bowl, combine the sweet chili sauce, soy sauce, minced garlic, grated ginger, lime juice, and honey to create a marinade.
- Add the chicken to the marinade, ensuring it is well coated. Let it marinate for at least 20 minutes.
- Preheat your grill or oven to medium-high heat. Cook the marinated chicken for about 6-8 minutes on each side, or until fully cooked.
- While the chicken is cooking, prepare the coconut lime drizzle by whisking together the coconut milk, lime juice, and chili flakes in a small bowl.
- Once the chicken is cooked, let it rest for a few minutes before slicing it.
- To serve, place a generous scoop of jasmine rice in a bowl, top with sliced chicken, drizzle with the coconut lime sauce, and garnish with fresh cilantro and lime wedges.
