2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
2 medium beets, peeled and sliced into 1/4-inch rounds
1 cup prepared pesto
8 ounces burrata cheese, torn into pieces
1/2 cup walnuts, roughly chopped
Olive oil, for drizzling
Salt & pepper, to taste
Fresh herbs (like basil or parsley) for garnish
Instructions
Preheat your oven to 425°F (220°C). On a large baking sheet, arrange the sweet potato and beet slices in a single layer. Drizzle with olive oil, and sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
Once roasted, remove the veggies from the oven and let them cool slightly. To build your stacks, start with a sweet potato slice, spread a dollop of pesto on top, add a slice of beet, then a spoonful of burrata. Repeat until you have a lovely tower.
Scatter the chopped walnuts generously over the top of your stacks.
Drizzle a final touch of olive oil over the stacks and sprinkle with fresh herbs. Serve these glorious stacks warm.
