3 medium sweet potatoes, peeled and diced (about 3 cups)
1 red bell pepper, finely chopped
1/2 red onion, diced
1 cup cooked black beans (canned or fresh)
1 avocado, diced
1/4 cup fresh cilantro, chopped (or parsley, if you prefer!)
3 tablespoons olive oil
2 tablespoons lime juice (freshly squeezed is best!)
1 teaspoon cumin powder
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Spread the diced sweet potatoes on a baking sheet, drizzle with a tablespoon of olive oil, and sprinkle with salt and pepper.
Roast the sweet potatoes in the oven for about 25-30 minutes, flipping halfway through.
Chop the red bell pepper, onion, and cilantro. If using fresh black beans, cook them now.
In a small bowl, whisk together the remaining olive oil, lime juice, cumin, and additional salt and pepper.
Once the sweet potatoes have cooled slightly, combine in a large bowl with the peppers, onion, avocado, black beans, and cilantro.
Pour your dressing over the salad and gently toss everything together.
