1 lb boneless, skinless chicken thighs
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
4 cloves fresh garlic, minced
1 teaspoon freshly grated ginger
1 tablespoon cornstarch
2 tablespoons vegetable oil
Salt and pepper, to taste
Green onions, chopped
Sesame seeds (optional)
Trim excess fat from chicken thighs and cut into bite-sized pieces.
In a bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger.
Toss chicken pieces with salt and pepper, pour in half of the sauce, and marinate for 10 minutes.
Heat vegetable oil in a skillet over medium-high heat, add chicken and cook for 5-6 minutes until golden brown.
Mix cornstarch with a tablespoon of cold water, then add remaining sauce and cornstarch slurry to the skillet, stirring until the sauce thickens.
Garnish with chopped green onions and sesame seeds before serving.
