This moist, tender cake combines tangy lemon, fresh blueberries, and fragrant thyme in a beautiful swirl. Perfect for teatime or any special occasion!
Ingredients

1½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

¾ cup sugar

2 large eggs

½ cup unsalted butter, melted

½ cup milk

Zest and juice of 1 lemon

1 tsp fresh thyme leaves (or ½ tsp dried)

1 cup fresh blueberries
Instructions

Prep batter: Preheat oven to 350°F (175°C). Whisk flour, baking powder, salt in a bowl. In another bowl, beat sugar and eggs until fluffy. Mix in butter, milk, lemon zest & juice, and thyme.

Combine: Fold dry ingredients into wet until just combined. Gently fold in blueberries.

Swirl: Pour half the batter into a greased loaf or round pan. Spoon remaining batter over and swirl lightly with a knife.

Bake: Bake for 35–40 minutes until golden and a toothpick comes out clean. Cool before slicing.

Use frozen blueberries if fresh aren’t available (don’t thaw).

Fresh thyme adds subtle earthiness; rosemary can be a unique substitute.
