Ingredients

  • 1 tsp baking powder

  • ¾ cup sugar

  • 2 large eggs

  • ½ cup unsalted butter, melted

  • ½ cup milk

  • Zest and juice of 1 lemon

  • 1 tsp fresh thyme leaves (or ½ tsp dried)

  • 1 cup fresh blueberries


Instructions

  1. Prep batter: Preheat oven to 350°F (175°C). Whisk flour, baking powder, salt in a bowl. In another bowl, beat sugar and eggs until fluffy. Mix in butter, milk, lemon zest & juice, and thyme.

  2. Combine: Fold dry ingredients into wet until just combined. Gently fold in blueberries.

  3. Swirl: Pour half the batter into a greased loaf or round pan. Spoon remaining batter over and swirl lightly with a knife.

  4. Bake: Bake for 35–40 minutes until golden and a toothpick comes out clean. Cool before slicing.

Notes

  • Use frozen blueberries if fresh aren’t available (don’t thaw).

  • Fresh thyme adds subtle earthiness; rosemary can be a unique substitute.

  • Dust with powdered sugar or drizzle lemon glaze for extra flair.
