Ingredients

1 ½ cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground ginger

¼ tsp salt

1 cup granulated sugar

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

1 ½ cups grated carrots

½ cup chopped crystallized ginger

½ cup walnuts or pecans, chopped (optional)
For the Ginger Crunch Swirl:

¼ cup brown sugar

1 tbsp ground ginger

2 tbsp all-purpose flour

2 tbsp butter, melted
Instructions

Preheat oven to 350°F (175°C). Grease and flour a loaf pan.

In a bowl, whisk flour, baking soda, cinnamon, ginger, and salt.

In a separate bowl, whisk sugar, eggs, oil, and vanilla until smooth. Add grated carrots and chopped crystallized ginger, then stir in the dry ingredients.

Pour batter into the prepared loaf pan.

In a small bowl, mix brown sugar, ground ginger, flour, and melted butter. Swirl this mixture into the top of the batter.

Bake for 50-55 minutes, or until a toothpick comes out clean. Let cool before slicing.

For an extra touch of crunch, add a sprinkle of granulated sugar on top before baking.
