Ingredients

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp salt

  • 1 cup granulated sugar

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 tsp vanilla extract

  • 1 ½ cups grated carrots

  • ½ cup chopped crystallized ginger

  • ½ cup walnuts or pecans, chopped (optional)

For the Ginger Crunch Swirl:

  • ¼ cup brown sugar

  • 1 tbsp ground ginger

  • 2 tbsp all-purpose flour

  • 2 tbsp butter, melted


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.

  • In a bowl, whisk flour, baking soda, cinnamon, ginger, and salt.

  • In a separate bowl, whisk sugar, eggs, oil, and vanilla until smooth. Add grated carrots and chopped crystallized ginger, then stir in the dry ingredients.

  • Pour batter into the prepared loaf pan.

  • In a small bowl, mix brown sugar, ground ginger, flour, and melted butter. Swirl this mixture into the top of the batter.

  • Bake for 50-55 minutes, or until a toothpick comes out clean. Let cool before slicing.

Notes

  • For an extra touch of crunch, add a sprinkle of granulated sugar on top before baking.

  • This bread can be stored in an airtight container for up to 3 days.
