- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- ½ cup salsa
- 6 small flour or corn tortillas, cut into halves
- 2 cups shredded Mexican blend cheese
- ½ cup sour cream (for serving)
- ¼ cup chopped green onions (for garnish)
- ¼ cup chopped fresh cilantro (optional)
Instructions

Cook the Beef
- Heat olive oil in a skillet over medium heat.
- Add ground beef and onion, cook until browned.
- Stir in garlic and taco seasoning, cooking for another 1-2 minutes.

Add the Fillings
- Mix in diced tomatoes, black beans, corn, and salsa. Simmer for 5 minutes.

Layer the Casserole
- Preheat oven to 375°F (190°C).
- In a greased baking dish, layer tortillas, beef mixture, and cheese. Repeat layers.
- Top with remaining cheese.
