  • 1 lb ground beef (or ground turkey)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • ½ cup salsa
  • 6 small flour or corn tortillas, cut into halves
  • 2 cups shredded Mexican blend cheese
  • ½ cup sour cream (for serving)
  • ¼ cup chopped green onions (for garnish)
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  • Cook the Beef

    • Heat olive oil in a skillet over medium heat.
    • Add ground beef and onion, cook until browned.
    • Stir in garlic and taco seasoning, cooking for another 1-2 minutes.
  • Add the Fillings

    • Mix in diced tomatoes, black beans, corn, and salsa. Simmer for 5 minutes.
  • Layer the Casserole

    • Preheat oven to 375°F (190°C).
    • In a greased baking dish, layer tortillas, beef mixture, and cheese. Repeat layers.
    • Top with remaining cheese.
  • Bake & Serve

    • Bake for 20 minutes until cheese is bubbly and golden.
    • Let cool slightly, then garnish with sour cream, green onions, and cilantro.
