  • 1 lb ground beef (or turkey, or even black beans for a vegetarian option)
  • 1 small onion, diced
  • 2 cloves of fresh garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn (frozen or canned)
  • 1 can (14 oz) diced tomatoes with green chilies
  • 2 cups chicken or vegetable broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

  • Instructions

  • Cook the Pasta: In a large pot, bring salted water to a boil and cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining and set the pasta aside.
  • Sauté the Aromatics: In the same pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute.
  • Brown the Meat: Add the ground beef (or your chosen protein) to the pot. Cook until it’s browned, about 6-7 minutes. Season with salt and pepper.
  • Add Taco Seasoning: Sprinkle the taco seasoning over the meat and stir it in, cooking for another minute.
  • Mix in the Veggies: Add corn and diced tomatoes (with juices). Stir to combine and let everything simmer together for about 5 minutes.
  • Combine Everything: Add the cooked pasta and broth to the pot. Stir and add reserved pasta water to reach desired consistency. Let it simmer for about 3-4 minutes.
