8 oz. of your favorite pasta (penne or fusilli work great!)
1 lb ground beef (or turkey, or even black beans for a vegetarian option)
1 small onion, diced
2 cloves of fresh garlic, minced
1 packet taco seasoning
1 cup corn (frozen or canned)
1 can (14 oz) diced tomatoes with green chilies
2 cups chicken or vegetable broth
1 cup shredded cheese (cheddar or Mexican blend)
1/4 cup chopped fresh cilantro (optional)
Salt and pepper to taste
Instructions
Cook the Pasta: In a large pot, bring salted water to a boil and cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining and set the pasta aside.
Sauté the Aromatics: In the same pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute.
Brown the Meat: Add the ground beef (or your chosen protein) to the pot. Cook until it’s browned, about 6-7 minutes. Season with salt and pepper.
Add Taco Seasoning: Sprinkle the taco seasoning over the meat and stir it in, cooking for another minute.
Mix in the Veggies: Add corn and diced tomatoes (with juices). Stir to combine and let everything simmer together for about 5 minutes.
Combine Everything: Add the cooked pasta and broth to the pot. Stir and add reserved pasta water to reach desired consistency. Let it simmer for about 3-4 minutes.
Cheesy Goodness: Remove from heat and stir in shredded cheese until melted and creamy. Adjust salt and pepper as necessary.
Garnish and Serve: Serve hot, garnished with fresh cilantro if desired.
