8 small flour tortillas
1 pound ground beef or turkey
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels, frozen or canned, drained
2 cups shredded cheese, cheddar or Monterey Jack
1 cup salsa, choose your spice level
1 medium onion, diced
1 bell pepper, diced
Fresh cilantro, for garnish, optional
Sour cream or Greek yogurt, for serving
Olive oil, for cooking
Instructions
In a large skillet over medium heat, drizzle a bit of olive oil and toss in the diced onion and bell pepper. Cook for about 3-5 minutes until they're soft and fragrant.
Push the veggies to one side of the skillet, then add the ground beef or turkey. Break it up with a spoon and cook until fully browned, stirring occasionally. Drain any excess fat if using beef.
Once the meat is cooked, sprinkle in the taco seasoning and a splash of water, mixing until everything is well combined. Cook for another 2-3 minutes until the flavors meld together.
Stir in the black beans and corn, warming everything for another 2 minutes.
Preheat your oven to 375°F (190°C) and grab a 9×13 inch baking dish for layering.
Start with a tortilla at the bottom, then layer with the meat and veggie mix, sprinkle with cheese, and spoon some salsa. Repeat for at least four layers.
Finish with a final tortilla, a generous amount of cheese, and a drizzle of salsa on top.
