8 ounces of elbow macaroni
1 tablespoon of unsalted butter (plus more for brushing)
1 tablespoon of all-purpose flour
1 cup of whole milk
1 cup of shredded sharp cheddar cheese
½ cup of shredded Gruyère cheese
½ cup of cooked lobster meat, roughly chopped
1 teaspoon of Dijon mustard
1 teaspoon of garlic powder
Salt and pepper to taste
6–8 large tortillas (flour or corn)
½ cup of panko breadcrumbs
Instructions
Boil a large pot of salted water and cook the macaroni until al dente. Drain and set aside.
In a saucepan over medium heat, melt the butter. Whisk in the flour and stir constantly for about 1 minute until it just begins to brown.
Gradually whisk in the milk, stirring until it thickens, around 3-5 minutes.
Lower the heat and add in the cheddar and Gruyère cheese, stirring until melted.
Stir in the lobster meat, Dijon mustard, garlic powder, and season with salt and pepper.
Add the cooked macaroni to the cheese sauce and stir gently to combine.
Preheat your oven to 375°F (190°C). Lay the tortillas flat and spoon an even amount of lobster mac and cheese onto each tortilla.
Roll the tortillas tightly, tucking in the sides, and place seam-side down in a greased baking dish.
Melt a little butter and mix it with the panko breadcrumbs. Sprinkle this mixture over the top of the rolls.
Bake for about 25-30 minutes, until the tops are golden and crispy.
