2 lbs beef chuck roast
1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 pound store-bought or homemade gnocchi
2 cups carrots, sliced
2 cups potatoes, cubed
Chopped fresh parsley for garnish
Instructions
Season the beef chuck roast generously with salt and pepper.
Heat olive oil in a large Dutch oven or heavy pot over medium-high heat; sear the roast on all sides until browned, about 4–5 minutes per side.
Remove the roast and set aside. In the same pot, add chopped onion and minced garlic, sauté for about 3 minutes until onion is translucent.
Pour in beef broth and Worcestershire sauce; scrape up any brown bits from the pot.
Stir in dried thyme and rosemary, then add the seared roast back to the pot, ensuring it is mostly submerged.
Cover and simmer on low for about 2 hours.
After 2 hours, add sliced carrots and cubed potatoes to the pot. Cover and cook for another 30–45 minutes until tender.
During the last 5 minutes, gently stir in the gnocchi and allow them to cook.
Serve with fresh parsley garnished on top.
