  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 pound store-bought or homemade gnocchi
  • 2 cups carrots, sliced
  • 2 cups potatoes, cubed
  • Chopped fresh parsley for garnish

  • Instructions

  • Season the beef chuck roast generously with salt and pepper.
  • Heat olive oil in a large Dutch oven or heavy pot over medium-high heat; sear the roast on all sides until browned, about 4–5 minutes per side.
  • Remove the roast and set aside. In the same pot, add chopped onion and minced garlic, sauté for about 3 minutes until onion is translucent.
  • Pour in beef broth and Worcestershire sauce; scrape up any brown bits from the pot.
  • Stir in dried thyme and rosemary, then add the seared roast back to the pot, ensuring it is mostly submerged.
  • Cover and simmer on low for about 2 hours.
  • After 2 hours, add sliced carrots and cubed potatoes to the pot. Cover and cook for another 30–45 minutes until tender.
  • During the last 5 minutes, gently stir in the gnocchi and allow them to cook.
  • Serve with fresh parsley garnished on top.
