  • 2 tablespoons olive oil
  • 4 salmon fillets (about 6 oz each), skinless
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • Juice of 1 large lemon
  • 1 tablespoon capers, rinsed and drained
  • 1/4 cup fresh parsley, chopped
  • Optional: Grated Parmesan cheese for serving

  • Instructions

  • Start by cooking the pasta. In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside, but make sure to reserve about half a cup of pasta water.
  • While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper.
  • Carefully place the salmon in the skillet and sear for about 4–5 minutes on each side, until golden brown and cooked through. Remove the salmon from the skillet, and place it on a plate to rest.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, just until fragrant.
  • Pour in the white wine and let it simmer for about 2 minutes, scraping up any brown bits from the bottom of the skillet.
  • Stir in the lemon juice and capers, then return the salmon to the skillet, spooning some of the sauce over the top.
  • Add the cooked spaghetti to the skillet, tossing everything together, adding reserved pasta water as needed until the sauce is silky.
  • Finally, sprinkle the fresh parsley over the top, give it one last toss, and serve.
