  • 1 bunch of garlic scapes (about 10-15), trimmed and cut in half
  • 1 cup of all-purpose flour, plus extra for dusting
  • 1 cup of ice-cold sparkling water
  • 1/2 teaspoon of baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying (canola or sunflower oil)
  • 1/2 cup of mayonnaise
  • 1/4 cup of garlic scapes, finely chopped
  • 1 tablespoon of lemon juice
  • 1 clove of garlic, minced

  • Instructions

  • Rinse the garlic scapes under cold water and trim off the rough ends. Cut them in half so they’re easier to manage.
  • In a bowl, whisk together the flour, baking powder, salt, and pepper. Pour in the ice-cold sparkling water and gently mix until just combined.
  • In a deep skillet or saucepan, heat about 2 inches of vegetable oil over medium-high heat. You want it hot enough for frying (about 350°F/175°C).
  • Lightly dust the garlic scapes with a bit of flour to help the batter adhere better. Then, dip them into the tempura batter.
  • Carefully place the battered scapes into the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer them to a plate lined with paper towels.
  • In a small bowl, mix together the mayonnaise, finely chopped garlic scapes, lemon juice, minced garlic, salt, and pepper.
  • Arrange the hot tempura garlic scapes on a platter with the aioli on the side for dipping.
