1 pound of ground beef (80/20 for best flavor)
½ cup of breadcrumbs (fresh is best for texture)
1 large egg
2 cloves of fresh garlic, minced
¼ cup of grated Parmesan cheese
1 teaspoon of oregano
Salt and pepper to taste
2 large yellow onions, sliced thinly
1 cup of beef broth
1 tablespoon of Worcestershire sauce
1 teaspoon of balsamic vinegar
½ teaspoon of thyme (dried or fresh)
1 cup of shredded Gruyère cheese (or Swiss as a substitute)
Instructions
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, minced garlic, Parmesan cheese, oregano, and a sprinkle of salt and pepper. Mix well.
Scoop out about 2 tablespoons of the mixture and roll it into a ball. Place on a plate or tray.
Slice the onions thinly and layer half at the bottom of the crockpot.
Place the meatballs on top of the onions and add the remaining onions on top.
In a separate bowl, whisk together the beef broth, Worcestershire sauce, balsamic vinegar, and thyme. Pour over the meatballs and onions.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
About 15 minutes before serving, sprinkle the Gruyère cheese on top and cover to let it melt.
