Bright, zesty, and bursting with fresh veggies, this Mediterranean pasta salad is the ultimate summer side or light main — easy, healthy, and packed with flavor!


Ingredients

  • 2 cups cooked rotini or penne pasta (cooled)

  • 1 cup cherry tomatoes, halved

  • ½ cup cucumber, diced

  • ½ cup Kalamata olives, halved

  • ¼ cup red onion, thinly sliced

  • ½ cup feta cheese, crumbled

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley or basil for garnish


Instructions

  1. In a large bowl, combine cooked pasta, tomatoes, cucumber, olives, onion, and feta.

  2. In a small bowl, whisk olive oil, vinegar, oregano, salt, and pepper.

  3. Pour dressing over salad and toss well.

  4. Chill for 15–20 minutes before serving, if desired. Garnish with herbs.

Notes

  • Add grilled chicken or chickpeas for extra protein.
